1 package (10 ounces) frozen mixed vegetables
1 medium onion diced
1 large carrot diced
1 stalk of celery diced
1 tbsp oil
2 quarts of chicken broth
4 chicken breasts cooked and diced
1 tsp thyme (optional)
1 tbsp minced parsley, salt & pepper to taste
1 New Hope Mills Biscuit Mix

I remember playing outside with the neighbor kids on a crisp fall day and walking inside our home to be greeted by an amazing aroma - my mother's cooking. It would call me into the kitchen where we would chat about my play time and what she was preparing for dinner. Now that I have my own family to feed, I enjoy the memories that often return when I create a recipe that produces those familiar smells that my mother used to create...

Directions to the Delicious:

Chicken & Dumplings

Step 1
In a large pot sauté onion, celery and carrots in oil for about 5 min, and season with salt
and pepper to taste.

Step 2
Pour in chicken broth and bring to a boil.

Step 3
Add all of the rest of ingredients and reduce heat to cook over medium heat for
20-30 minutes or until vegetables are tender.

Step 4
Prepare 1 batch New Hope Mills Biscuit Mix, according to recipe on the bag.

Step 5
On a floured surface, pat biscuits to 1/4-in. thickness; cut into 1/4-in. strips. Bring
soup to boil; drop in strips. OR scoop biscuit batter by tablespoonfuls, roll into balls
and drop onto boiling soup.

Step 6
Cover and simmer for 15-18 minutes.
